Ingredients

  • 350g paneer
  • 1 tbsp chilli powder
  • ½ tsp turmeric
  • ½ tsp salt
  • 2 tbsp gram flour
  • 1 tsp ground coriander
  • 1 tsp ground cumin
  • 50ml natural yoghurt
  • ½ tsp garam masala

Method

  1. Slice the paneer into pieces about 2cm cubed. Shake over the chilli powder, turmeric and the salt. Mix together gently to ensure that the paneer is covered evenly but don't let it break. Marinate for 10 minutes.

  2. Combine the gram flour with the coriander, cumin and yoghurt. Coat the paneer with the spiced yoghurt and chill for 30 minutes.

  3. Heat the grill to its highest setting. Put the paneer onto the skewers and grill for 3-5 minutes on each side - until slightly charred at the edges. Serve immediately, sprinkled with garam masala with a wedge of lemon to squeeze over.

Don't forget if you're using bamboo skewers you'll need to soak them in water for 30 minutes prior to threading on the paneer. This ensures that they don't catch fire under the grill.

You can also make this dish on a barbeque if you wish.

North Indian Chicken Curry

Ingredients

  • 4 tbsp oil
  • 1 tsp whole cumin seeds
  • 1 cinnamon stick
  • 2 cloves
  • 2 green cardamom pods
  • 1 onion, chopped
  • 6 cloves garlic, chopped
  • 1½ tbsp chopped ginger
  • 1 tbsp ground coriander
  • ½ tsp ground turmeric
  • 1 tsp chilli powder
  • 2 tomatoes, pulped
  • 450g chicken, skinned and jointed
  • ½ tsp garam masala
  • Small bunch coriander leaves

Method

  1. Heat the oil in a large non-stick pan. Add the whole cumin seeds, cinnamon, cloves and cardamom pods and fry for about 20 seconds until an aroma is detectable.

  2. Add the onion to the pan and fry gently for around 10 minutes until soft and golden brown, stirring frequently. Stir in the garlic and ginger and stir for about half a minute then add a pinch of salt and the coriander, turmeric and chilli powder, stir very briefly. Add the tomatoes which you will have pulped in a food processor and cook over a medium heat for about 10 minutes by which time the liquid should have dried and the oil leached out of the mixture.

  3. In the same pan, brown the chicken until golden and add water to until the chicken is nearly covered. Bring the liquid up to the boil and then simmer until the chicken is properly cooked. Really slow cooking makes for a much tastier dish and better still if you make it the day before you want to eat it. If the chicken joints are small it should take about 15 minutes to cook or 25 to 30 minutes for larger joints. This takes about 15 minutes for small joints and up to 25-30 minutes for larger ones.

  4. Sprinkle with garam masala and coriander leaves and serve hot.

How To Make:

Start by lightly greasing your baking tray and then put it aside (out of the way) until you need it.

Sift the flour and the salt together into your medium mixing bowl. Rub in the butter until the mixture starts looking like breadcrumbs. Then add in the sugar and sultanas and mix it all together with your knife.

With your fork lightly beat your egg and milk together in the small mixing bowl and then add them to your flour and sultana mixture. Stir it all together with your knife until you have a dough.

With your dessertspoon grab spoonfuls of the mixture and put them on your greased baking tray. You don't need to make perfect round shapes. When you put them on the tray remember that they will get bigger while they are cooking so spread them about 1 to 2 inches apart.

After you've done that carefully put them in a moderate oven for about 10 to 15 minutes. When done carefully take the tray out and allow them to cool before eating them.

Two Easy Recipes Using Small Frozen Shrimp

Many people wonder shat is the best way to cook frozen shrimp. It is very simple, really; all you have to do is take the frozen shrimp out of the freezer the day before, place it in a bowl and put it in the fridge overnight. Your shrimp will be completely defrosted the day after.

The way you cook frozen shrimp is no different to the way you would cook it from fresh. In fact, there is a very good chance that the fresh shrimp you bought at the store has already been frozen, as seafood (particularly shrimp) freezes really well.

In some cases, it is not necessary to de-freeze your shrimp if it is small enough. Small shrimp is really useful to add flavor to certain dishes (like the recipes listed below) and will cook easily once it hits the heat. Make sure you wash it before adding it to the recipes!

Two Easy Recipes Using Small Frozen Shrimp

Shrimp and Fish Pie

500g frozen shrimp
1kg frozen mixed chunky vegetables
520g white fish fillets
4 baking potatoes
500g salmon fillets
40g instant parsley sauce mix

1. Defrost half a 1kg packer of mixed vegetables for around 20 or 30 minutes and drain. Peel the potatoes cut into quarters and boil for 20 minutes or until soft.

2. Place the shrimp and fish in a pan, cover with milk and simmer for 15 minutes. Make up a 40gr packet of instant parsley sauce, following pack instructions.

3. Drain the fish and shrimp, reserving some of the milk. Flake the fish into pieces. Add the fish pieces, small shrimp and the defrosted vegetables into the parsley sauce. Season well and tip the mixture into an ovenproof dish. Drain and mash the potatoes with the milk. Spread over the fish, shrimp and vegetables and bake in a preheated oven at 200 degrees C, gas mark 6.

4. Cook the rest of the vegetables from frozen, following pack instructions and serve on the side.

Shrimp and Salmon Risotto

120g frozen shrimp
200g smoked salmon trimmings
1 medium onion
1 lemon
225g French beans
500g risotto rice

1. Chop the onion finely and fry in a tablespoon of olive oil over a medium heat for around 5 minutes or until softened.

2. Pour 1liter of vegetable stock, made up using two and a half stock cubes, into a separate large saucepan and heat gently.

3. Add the risotto rice to the onion and stir for 1 or 2 minutes until the rice is fully coated.

4. Gradually add the stock to the rice, allowing the rice to absorb each ladle of liquid before adding more. After 15 minutes, add the French beans, the smoked salmon trimmings and the shrimp. Stir for another 5 minutes. Add the juice and zest of the lemon and season with black pepper.

The dish is ready to be served!

Use a cake mix and prepare the cupcakes according to package directions. Place paper liners in muffin tin. Fill each muffin tin about two-thirds full and then turn the cone upside down and place on top of the batter. Bake 18-20 minutes at 350 degrees. Test with a toothpick to make sure the cupcakes are done. After the cupcakes are cooled, remove the paper lining and frost. Add decorations to the frosting such as M&M's, Skittles and either rainbow sprinkles or chocolate sprinkles.

I've also seen recipes that reverse this a bit. These recipes say to fill an ice cream cone about 2/3 of the way with batter, stand upright on a baking sheet and bake. I've never done it this way, but I see it on many websites and blogs.

If you buy white frosting, you can mix a few drops of food coloring into the frosting so that kids can have almost any color frosting they'd like. You can add almost anything on top of the frosting. My kids have always liked gummy worms. Add a few of those to a green frosting and the kids just love it. You can also add jellied candies on top.

We once had a birthday party where I put tons of decorations in various bowls and let the kids come up with their own combinations of colored frostings and decorations. Some kids are so creative with their designs. You can cut licorice strips into smaller pieces so kids can create bugs and butterflies. Truly, the possibilities are endless on how to use other candies to decorate cupcakes.

  1. Mix the water, pumpkin, nectar, bouillon, ginger, garlic and crushed red pepper in large saucepan.

Pour the liquid jello into the eggshells and store them hole side up in the egg box in the refrigerator until the jello sets. This will take a couple of hours. Take the jello eggs out of the refrigerator half an hour before serving them and peel them like hard boiled eggs.

  4. Remove the cookies and cool to room temperature on a wire rack.
  5. Using a small bowl, mix the coconut and yellow food coloring to achieve a straw like color.
  6. To make the scarecrow hats place the gum drops on a lightly sugared surface and press and roll them flat.
  7. Using a butter knife, cut hat shapes for each flattened gum drop.
  8. Place the vanilla frosting evenly into 3 separate bowls.
  9. Add drops of orange, red and blue food coloring into each of the bowls (one color per bowl).
  10. After the cookies have cooled, frost each cookie with the blue and red frosting making the shirts and pants. Make some shirts blue and pants red and with some shirts red and pants blue.
  11. Next frost the head, feet and hands with the orange frosting.
  12. Press your colored coconut into the hands and feet to form the straw.
  13. Place the hat onto the scarecrows head by placing a little orange frosting on the back of the hat and pressing it onto the scarecrow.
  14. Place 2 to 3 of mini chocolate chips down the front of the scarecrows shirt for buttons. Place chips on the head for the eyes, nose and mouth.

Directions

Place green beans, 1/3 cup water and a large pinch of salt into a medium skillet. Cover, turn heat on high and bring water to a boil.
