Ingredients

  • 350g paneer
  • 1 tbsp chilli powder
  • ½ tsp turmeric
  • ½ tsp salt
  • 2 tbsp gram flour
  • 1 tsp ground coriander
  • 1 tsp ground cumin
  • 50ml natural yoghurt
  • ½ tsp garam masala

Method

  1. Slice the paneer into pieces about 2cm cubed. Shake over the chilli powder, turmeric and the salt. Mix together gently to ensure that the paneer is covered evenly but don't let it break. Marinate for 10 minutes.

  2. Combine the gram flour with the coriander, cumin and yoghurt. Coat the paneer with the spiced yoghurt and chill for 30 minutes.

  3. Heat the grill to its highest setting. Put the paneer onto the skewers and grill for 3-5 minutes on each side - until slightly charred at the edges. Serve immediately, sprinkled with garam masala with a wedge of lemon to squeeze over.

Don't forget if you're using bamboo skewers you'll need to soak them in water for 30 minutes prior to threading on the paneer. This ensures that they don't catch fire under the grill.

You can also make this dish on a barbeque if you wish.

North Indian Chicken Curry

Ingredients

  • 4 tbsp oil
  • 1 tsp whole cumin seeds
  • 1 cinnamon stick
  • 2 cloves
  • 2 green cardamom pods
  • 1 onion, chopped
  • 6 cloves garlic, chopped
  • 1½ tbsp chopped ginger
  • 1 tbsp ground coriander
  • ½ tsp ground turmeric
  • 1 tsp chilli powder
  • 2 tomatoes, pulped
  • 450g chicken, skinned and jointed
  • ½ tsp garam masala
  • Small bunch coriander leaves

Method

  1. Heat the oil in a large non-stick pan. Add the whole cumin seeds, cinnamon, cloves and cardamom pods and fry for about 20 seconds until an aroma is detectable.

  2. Add the onion to the pan and fry gently for around 10 minutes until soft and golden brown, stirring frequently. Stir in the garlic and ginger and stir for about half a minute then add a pinch of salt and the coriander, turmeric and chilli powder, stir very briefly. Add the tomatoes which you will have pulped in a food processor and cook over a medium heat for about 10 minutes by which time the liquid should have dried and the oil leached out of the mixture.

  3. In the same pan, brown the chicken until golden and add water to until the chicken is nearly covered. Bring the liquid up to the boil and then simmer until the chicken is properly cooked. Really slow cooking makes for a much tastier dish and better still if you make it the day before you want to eat it. If the chicken joints are small it should take about 15 minutes to cook or 25 to 30 minutes for larger joints. This takes about 15 minutes for small joints and up to 25-30 minutes for larger ones.

  4. Sprinkle with garam masala and coriander leaves and serve hot.

How To Make:

Start by lightly greasing your baking tray and then put it aside (out of the way) until you need it.

Sift the flour and the salt together into your medium mixing bowl. Rub in the butter until the mixture starts looking like breadcrumbs. Then add in the sugar and sultanas and mix it all together with your knife.

With your fork lightly beat your egg and milk together in the small mixing bowl and then add them to your flour and sultana mixture. Stir it all together with your knife until you have a dough.

With your dessertspoon grab spoonfuls of the mixture and put them on your greased baking tray. You don't need to make perfect round shapes. When you put them on the tray remember that they will get bigger while they are cooking so spread them about 1 to 2 inches apart.

After you've done that carefully put them in a moderate oven for about 10 to 15 minutes. When done carefully take the tray out and allow them to cool before eating them.

Prep Time: 1hr, Cook time 2 hrs 30 Min

Ingredients:

1 Head of Green Cabbage - Cut into slices and chopped
3 bunches Collard greens, 3 bunches of Mustard Greens - rinsed, trimmed and chopped
1 Onion - Cut into small blocks
1 Turnip - peeled and chopped into small pieces
4 smoked Turkey Neck Bones
8 cups of Water
Garlic salt, Season Salt and Black pepper for Taste
1 tablespoon cayenne pepper (Optional)
1/4 cup olive oil - to make Greens and Cabbage not stick

How to Cook Southern Style

Directions!

Heat olive oil and water in a large pot over medium heat.

Add the collard greens, Mustard greens to the cooking pot, and turn the heat up to medium- high. Add the Cabbage last, about 20 minutes before Mustard and Collards are complete. The Cabbage take the shortest amount of time to cook.

Let the greens cook down for about 45 minutes, and stir occasionally.

Reduce heat to medium, and season with Garlic salt, Seasoning Salt, black pepper to taste. Continue to cook until the greens are tender and dark green, 45 to 60 minutes.

Cook the Smoked Turkey Neck Bones in a separate pot with Onions. Cook about 1 hour than drain and keep Turkey stock. Cook simultaneously so Greens and Cabbage will be ready together.

Mix in the chopped onions, Smoked Neck Bones, 2 cups Turkey Stock, Turnips, into the greens and cabbage and keep on low, and heat for 15 minutes or until the Turnips are soft and ready to eat.

This Dish go very well with Hot Water Corn Bread, and some Mc.Ilhenny Co. Tabasco Sauce. The spike of Tabasco Sauce will enhance the southern cooking experience, and leave your mouth gushing for more. What a mild and pleasant surprise.

Cooking greens go back a long way in the African American Community. Hopefully, everyone can share the joy of some of the healthiest Kale leaves on earth "Better known as Collard Greens". And the Mustard greens leaf that look like spinach but have a better taste. The Cabbage will add a twist to this dish and make the dish more fulfillment.

This is a easy recipe to make, and will last for days if possible. You can even freeze the Greens after cooking for a later date. You can serve this recipe without freezing the coleslaw -- or you can make it up ahead of time (such as before Thanksgiving or Christmas dinner) and store it in the refrigerator or the freezer until you're ready to use it.

o 1 medium head of cabbage OR 2 to 3 packages of shredded cabbage (ever since I scraped my knuckles raw grating cabbage for 150 people for a church dinner, I have preferred to use the shredded cabbage you can buy at the grocery store )

Freezer Coleslaw (Easy Recipe)

o 1 teaspoon of celery seed

o 1/2 green pepper chopped (optional)

Boil the following for 1 minute:

1/2 cup white vinegar

1/2 cup water

2 cups sugar

1/4 teaspoon salt

Then:

Pour over the cabbage, celery and green pepper mixture. (If it seems like it's way too soupy, which will depend a lot upon the moisture content of the cabbage you're using, add the third package of shredded cabbage. If you're going to freeze it, however, you do want the coleslaw to be covered with liquid.)

At this point, you can let the coleslaw sit in the refrigerator for 1 to 2 hours or overnight and serve, or you can put it into containers and freeze. The coleslaw will keep in the refrigerator for 1 to 2 weeks.

Note: this recipe works very well for red cabbage, which makes a pretty side dish.

My husband spent a year abroad studying in Bonn, Germany and traveling all over Europe, so when he asked me to create an authentic Hungarian Goulash recipe I was a little timid. With a little bit of research and my crock pot, I came up with this recipe and held my breath while he took his first bite.

We served it over noodles, however traditionally it's thicker than a stew and is eaten by itself; no dumplings, no noodles. Ironically enough, a few months later a friend of ours made the same recipe for their father who was also picky about his goulash having spent time in Budapest. More compliments reigned in; this truly was a close-to-authentic recipe. Beyond that, it's extremely easy and very tasty - enjoy!

Hungarian Goulash Crock Pot Recipe

Crock pot Hungarian Goulash

Ingredients:

3 medium onions, chopped

1 large green pepper, chopped

4 cloves garlic, minced

2 pounds beef stew meat or beef round steak cut into 1 inch pieces

1- 12 ounce can tomato paste

3 tsp paprika

¼ tsp black pepper

1- 14.5 ounce can diced tomatoes, undrained

Spray crock pot with non-stick cooking spray. Add all ingredients, mix well. Cover and cook on low for 7-8 hours or high 3-4 hours. Serve with noodles.

Note: Add another teaspoon or so of paprika if you'd like a little more spice.

The way you cook frozen shrimp is no different to the way you would cook it from fresh. In fact, there is a very good chance that the fresh shrimp you bought at the store has already been frozen, as seafood (particularly shrimp) freezes really well.

Shrimp and Fish Pie

500g frozen shrimp
1kg frozen mixed chunky vegetables
520g white fish fillets
4 baking potatoes
500g salmon fillets
40g instant parsley sauce mix

1. Defrost half a 1kg packer of mixed vegetables for around 20 or 30 minutes and drain. Peel the potatoes cut into quarters and boil for 20 minutes or until soft.

2. Place the shrimp and fish in a pan, cover with milk and simmer for 15 minutes. Make up a 40gr packet of instant parsley sauce, following pack instructions.

3. Drain the fish and shrimp, reserving some of the milk. Flake the fish into pieces. Add the fish pieces, small shrimp and the defrosted vegetables into the parsley sauce. Season well and tip the mixture into an ovenproof dish. Drain and mash the potatoes with the milk. Spread over the fish, shrimp and vegetables and bake in a preheated oven at 200 degrees C, gas mark 6.

4. Cook the rest of the vegetables from frozen, following pack instructions and serve on the side.

Shrimp and Salmon Risotto

120g frozen shrimp
200g smoked salmon trimmings
1 medium onion
1 lemon
225g French beans
500g risotto rice

1. Chop the onion finely and fry in a tablespoon of olive oil over a medium heat for around 5 minutes or until softened.

2. Pour 1liter of vegetable stock, made up using two and a half stock cubes, into a separate large saucepan and heat gently.

3. Add the risotto rice to the onion and stir for 1 or 2 minutes until the rice is fully coated.

4. Gradually add the stock to the rice, allowing the rice to absorb each ladle of liquid before adding more. After 15 minutes, add the French beans, the smoked salmon trimmings and the shrimp. Stir for another 5 minutes. Add the juice and zest of the lemon and season with black pepper.

The dish is ready to be served!

Both of my girls have been helping in the kitchen since they were quite young. I believe by making kid friendly recipes, your kids really do get to see that cooking can be both fun but also delicious.

Most kids I know love cupcakes. We have always used normal sized cupcake tins when the kids are helping. The small muffin tins make cupcakes that are just too small for young hands to handle.

The easiest way to make cupcakes for younger kids is to start with a boxed cake mix. This first recipe starts with one box of Devil's Food Cake mix. Make the batter according to the box directions. This recipe has a yummy filling and is easy for kids to make:

Combine eight ounces of softened cream cheese, one-third cup of sugar and one egg. Mix until blended. Then mix in six ounces of chocolate chips.

Then fill up the muffin the rest of the way, allowing some room for rising. Bake at 350 degrees for about twenty-five minutes. If you want to add frosting, I always bought the already mixed frosting that the kids could just spread on.

Another really fun cupcake idea for kids is to use ice cream cones. Buy the ice cream cones that are flat on the bottom.

Use a cake mix and prepare the cupcakes according to package directions. Place paper liners in muffin tin. Fill each muffin tin about two-thirds full and then turn the cone upside down and place on top of the batter. Bake 18-20 minutes at 350 degrees. Test with a toothpick to make sure the cupcakes are done. After the cupcakes are cooled, remove the paper lining and frost. Add decorations to the frosting such as M&M's, Skittles and either rainbow sprinkles or chocolate sprinkles.

I've also seen recipes that reverse this a bit. These recipes say to fill an ice cream cone about 2/3 of the way with batter, stand upright on a baking sheet and bake. I've never done it this way, but I see it on many websites and blogs.

If you buy white frosting, you can mix a few drops of food coloring into the frosting so that kids can have almost any color frosting they'd like. You can add almost anything on top of the frosting. My kids have always liked gummy worms. Add a few of those to a green frosting and the kids just love it. You can also add jellied candies on top.

We once had a birthday party where I put tons of decorations in various bowls and let the kids come up with their own combinations of colored frostings and decorations. Some kids are so creative with their designs. You can cut licorice strips into smaller pieces so kids can create bugs and butterflies. Truly, the possibilities are endless on how to use other candies to decorate cupcakes.

Crush the graham crackers until they are almost like powder and put them in a big bowl. Melt chocolate and stir often until smooth. Stick a toothpick in one of the marshmallows and dip it in the chocolate all the way. Then dip it in the graham cracker crumbs half way. Set on the wax paper to dry.

White Chocolate Mix

10 oz of mini twist pretzels
5 cups of toasted oat cereal
5 cups of crispy corn cereal squares
2 cups of salted peanuts
14 oz of candy-coated milk chocolate pieces
11 oz of white chocolate chips
3 tablespoons vegetable oil

Line 3 baking sheets with waxed paper or parchment. In a large bowl, combine mini pretzels, toasted oat cereal, crispy corn cereal squares, salted peanuts, and candy-coated chocolate pieces. In a microwave-safe bowl, heat chips and oil on medium-high for 2 minutes, stirring once. Microwave on high for 10 seconds; stir until smooth. Pour over cereal mixture and mix well. Spread onto prepared baking sheets. Break apart when it's cooled. Store in an airtight container.

  9. Return to saucepan and heat to serving temperature

Homemade Pot Pie - Recipe For Beef Pot Pie

This recipe for homemade beef pot pie is a good way to use leftover pot roast from Sunday dinner. The dropped biscuits can be made from scratch, or a box mix may be used.

Ingredients for Pot Pie

2 cups of leftover, fully-cooked roast beef, cut into small pieces
1 sweet onion, chopped
1 cup canned peas, drained
1 teaspoon salt
1/4 teaspoon pepper
1 cup cooked potatoes, cut in chunks
1 cup cooked carrots, cut in chunks
1 jar of beef or au jus gravy
Dropped biscuit dough, prepared (below)

Instructions for Pot Pie

Preheat oven to 350 degrees.

Gently combine all ingredients, except the biscuit dough, in a large mixing bowl with a big spoon, such as a wooden spoon.

After adding the jar of gravy, fill it with a little water, put the lid back on, shake it up, and mix this in with the rest of the mixture.

Pour the prepared mixture into a 13 by 9 inch cake pan. Drop the biscuits on top (see below) to cover the pot pie.

Bake at 350 degrees for 20 to 30 minutes, or until hot through and biscuits are done and nicely browned. Since everything is already cooked, this just has to heat through and blend the flavors.

Dropped Biscuit Dough

2 cups flour
3 teaspoons baking powder
1/2 teaspoon salt
1 tablespoon shortening
Milk to make a stiff batter

Put dry ingredients in a large bowl and mix together. Add the shortening and work through with tips of fingers or fork. Add milk, small amounts at a time, until you have a batter that can be dropped from a spoon without spreading.

Drop by spoonfuls on top of the pot pie mixture.
